Link to transcript of an online chat with del Toro and Peter Jackson. They answered a lot of questions here and it's a very interesting read. Lots about GdT's thoughts about Smaug, how and when the movies will be written and shot, who will be cast etc. Someone asked if Ron Perlman will do the voice for Smaug, but it sounds like Guillermo has someone else in mind. It also sounds like he has another role in mind for RP. Beorn maybe? Or a dwarf? If they follow the formula from LOTR, they will cast really tall guys as the dwarves and shorter ones as hobbits so that they look "right" without any movie-magic involved.

Ah good, it's good to see that they're not planning to put LOTR actors willy-nilly in the movie focused primarily n The Hobbit. And I most certainly hope they keep Beorn, he was one of my favourite characters in the book, if not the fav.

How does having tall people play dwarves and short people play hobbits make this happen? thanks

Because hobbits are even shorter than dwarves.
In the LOTR movies they'd have John Rhys-Davies in full make-up and costume as Gimli appear in the same scenes as the actors who play the hobbits. JRD is about 6'1, while the hobbit actors are all about 5'6-5'7, so there is no discrepancy with the height.

Yeah, it's funny how the RL JRD was actually the tallest guy in the Fellowship! I loved those things from the LOTR movies, in the DVD-extras when they showed how they did some of the stuff with Gandalf looking so big and the hobbits looking small... PJ & Co really used all the tricks in the book for that.

It's definitely happening at this point. I think in that chat PJ and del Toro did online, they said that they are going for a PG13 rating, same as the LOTR movies. Which is probably fair considering that there is a lot of scary stuff and a big huge battle at the end. A short recap of the chat is here. Full chat transcript is here. Edited to add TORN's new Hobbit Movie FAQ.[/url]
