Ripley, that sounds like Christmas Day in my family. It started when it was just my parents and I waiting for my grandmother to fly in on Christmas Day. Rather than deal with trying to get a full meal made when someone was arriving in the middle of the day, we just did a selection of cheeses and finger foods. We enjoyed it so much, we kept doing it. Nowadays, the boyfriend and I tend to alternate between that and a more traditional Italian feast. I've no idea what we'll do this year, since it's just the two of us.

I have the masa under control, I was just wondering if you did anything to the pineapple first. Does canned work best? We just add in canned crushed pineapple, drained.

anyone have a good lighter version of baked mac and cheese that actually tastes good? I keep fiddling with it but it just doesn't taste as good as the Full Fat Baked Cheese Deliciousness kind.
ETA: Had a total disaster of a meal tonight. The lowfat cheese was stringy and it smelled like fake cheese. Blech. The search continues.

I have made this one -- Macaroni and 4 Cheeses -- several times, and Mr. Smee eats it without too much grumbling (and he is a BIG fan of my traditional heart-attack-inducing mac and cheese).

I just made about 2 cups of homemade salted caramel sauce. And it's awesome. But now I have to figure out what to do with it - preferably something that gets it out of the house so I don't eat it all. Any suggestions?

Make chocolate cookies and use it to make cookie sandwiches; you could give those as gifts.
Alternatively, get a spoon. Dip spoon into bowl, lift to mouth. Repeat as needed. Promise yourself you'll diet after the holidays.

I don't normally like Gingerbread cookies or similarly spiced Christmassy things, but I made Nigella's Guinness Gingerbread the other day and it is so so good. Really moist and just deliciously spiced. I may have been converted.

I've had a couple of different versions of gingerbread with Guinness/stout during the past month, and they've been delicious. The stout really seems to add something.
