Ohhh, what do you put in it? (The less hot one)
I'm planning 4th of July already. We're going to be gone on vacation and won't get home til 3rd. So I need everything planned completely. We'll have my husband's brother and brother's wife plus my mother-n-law will be getting a day out of her nursing home. So, we've got some interesting tastes to satisfy.
I'm thinking hot dogs on the grill for my daughter. Maybe chicken kabobs too? Ribs won't work and steaks will be pricey. Need to figure out sides which are healthy but not made with "weird" ingredients. These people are so picky.
What are you guys making?

My mom just made a tex-mex potato salad last night that was good (with corn, peppers, tomatos, flavoured with cilantro and chili powder.) It was very good. I have the recipe already scanned (along with a moroccan potato salad and classic - from the paper last week.)

I'm in charge of desserts in my family, so for the 4th I'll be making a lemon curd layer cake and then I think a raspberry-mango terrine. But I might just make raspberry sorbet, I'm not too crazy about mango (other people in my family are. I need to decide how much I like them.).

mmm, I would love that tex mex potato salad but my husband hates tomatoes, peppers, and cilantro. See what I'm dealing with. Blech.
And wow, lemon curd layer cake sounds delicious! And it reminds me that I didn't even think about dessert. Crap. My mil is diabetic so I need to make two desserts or make one that she can eat.

MrsCatHead, could you do a "pile on" sort of potato salad? I've heard of "mashed potato bars" or baked potato bars, where you have the basics and then condiments. A basic potato salad could be served and then people could spiff it up anyway they wanted--tomatoes, corn, peppers, cilantro, bacon, celery, uh, cornichons, caviar...or whatever. It might be more work up front, but it could be a fun approach.

oooh Sunnyhorse, Whole Foods has a version of that using smoked mozarella. Soooo good.

I'd bought a bunch of fresh dill at the Farmer's Market to use for salmon- but had way too much left over. So I just googled recipes that used fresh dill and the first to pop up were Beer Bread related. I don't drink beer so I actually swung by my parents' house and got some from my Dad.
It's so damn simple I started getting OCD about checking the recipe to make sure I hadn't left out a step. But nope, it's just that simple.
3 cups of flour, 1 1/2 tablespoons of baking powder, 1 tablespoon of sugar, 1/4 teaspoon of salt. Sift that all together. Then add 3 tablespoons of fresh dill (I eyeballed it) and 12 oz of beer and mix it all into a dough. Put it in the oven at 375 degrees for about 50 minutes or until it's brown on top and that's it.
T'was yummy! I gave most of the it to my Dad for Father's Day though (Well, it WAS his beer)

A friend is coming over for lunch on Saturday and I was thinking of making spanikopita. Do you think I can assemble it the night before or should I do everything just before baking?

You could probably make the filling the night before witout too much of a problem, but I would assemble right before I baked it.
