I almost forgot. Splash is another big favorite of mine. With John Candy and Eugene Levy both so funny and Tom Hanks so delightful, I could watch it over and over again.

One of his underrated movies is Larry Crowne. You've got to do your best to ignore the Julia Roberts/romance subplot, but the scenes with his younger classmates (and George Takei!) are great.
