I saw him when he was on tour in 2004. He was great, but line for line every joke he did was from either the Tater Salad special or the Blue Collar Comedy one. No new material that night.
I'm not surprised to hear he really doesn't drink that much, you probably couldn't really perform if you were pounding back scotch all night.

My boss met him backstage when he was here a few weeks ago and said he was nice. Also said he didn't drink as much as they make it look like. Since it was backstage, I'm assuming your boss wasn't Squirrel Man? Heh. I read on Wiki or maybe IMDB that it's actually apple juice he brings on stage. Makes sense. I can't see drinking that much scotch and still staying coherant. He just got married-to Jeff Foxworthy's interior designer. Jeff set them up. I thought that was sweet.

I like this guy a lot. His stage persona is as a nasty white-trash sum-bedge (say it out loud), but he seems like a really nice guy in real life (if you read the liner notes from his "Drunk in Public" album, he calls his son "the music of my life" or some such thing. Melted my heart, I tell you what).
And, like many, many other people, the way he delivers the Tater Salad story gets us (me and the Mr.) every time.
