I have always pictured Bellatrix as Helena Bohnam Carter. She could work though. I also don't think Fluer is pretty enough, the girl they cast as Cho is perfect though.

When I first read OotP, I pictured Umbridge as looking somewhat like Sally Struthers, which I know wouldn't work out because she's American, but I still think it's funny. Every time I re-read the book, however, Umbridge starts to look and sound more like Star Jones, probably because Umbridge's demeanor reminds me a lot of Miss Stah's (as well as JKR describing Umbridge as "toady"). BTW, Snapple lady=hilarious.
I've also imagined Keira Knightley playing Tonks since I first read the book, since it came out when KK was the "It Girl" of the moment. On the other hand, knowing now that Tonks <<ends up with Lupin>> (don't know if I have to spoiler that or not, but what the heck) they may want to make her older... It seems to me they've generally made the characters older than they should be--i.e. the Marauders, even Aunt Petunia--so maybe having someone in their late 20's-early 30's makes more sense. Kate Winslet would be awesome!
Cho is a cutie. Fleur brings the fug. Even though she is only 1/4 Veela or whatever, and Hermione and Ginny clearly don't think she's all that, I think she should be a little prettier.

I'd love to see Imelda Staunton als Umbridge. Helena Bonham Carter would be cool as well. Before PoA came out I also pictured her in the Trelawney role, but Emma Thompson was great as well.

My second grade teacher, Mrs. Hess, would be perfect for Umbridge. I still twitch when I think of her.

I'm probably the only one, but I thought Emily Watson could be a good surprise-casting choice for Bellatrix Lestrange. She's got that massive sixhead for the makeup people to work with (I'm kind of assuming massive make-up is part of the deal for whoever plays Bellatrix). She has such a unique, doll-like face that I would love to see how thoroughly the make-up people could warp it.
I liked the picture of Helen McCrory upthread, though.
In my mind Imelda Staunton is the perfect Umbridge, although I love Helen Mirren so much I'd never complain if she were cast. On the topic of Umbridge, I definitely noticed the gang-rape undertones of the Centaur scene and was shocked Rowling even went there as much as she did.

Really? Because that would rock. I just watched Helen McCrory act alongside Sienna Miller in "As You Like It" in London and she was incredible. Helen McCrory can honestly do anything.
