Dinner was elbow macaroni, tuna and celery salad. I had a craving. In my pre-vegetarian days this was one of my favorite dishes. I recently discovered that a mixture of lightly smushed garbanzo beans and seaweed flakes made a decent substitute for the tuna. Yum. I make chick pea salad minus the sea weed and it is super tasty. Lunch tomorrow is a big green salad with chick pea salad and a sprinkle of feta cheese.

I'm on a chickpea kick recently. In my continuing quest to find a light but satisfying lunch, I've been having spinach mixed with chickpeas that I season with cumin, paprika and garlic powder, and everything mixed with a smidge of cream cheese.

ooo I love chickpeas. My fav is with parsley, chopped cucumbers and red onions, mustard vinaigrette.

Ooo! That sounds good! I may do that as a side for dinner tonight!
Dinner last night was soft tacos filled with grated zucchini, corn and feta and some salsa.

I love chickpeas. My favourite dish right now is roasted vegetables (aubergine, courgettes and tomato, with garlic and onion) simmered in paprika-spiced passata, with a tin of chickpeas added.

I took my friend out for her birthday. We went to dinner at Delancey, a pizza place here in Seattle. I've been wanting to go for a while. It was delicious. We shared a pizza with tomato sauce, aged and fresh mozzarella, Grana, roasted garlic scapes and thinly shaved porcini mushrooms. So good. While talking to the waitress we mentioned it was our first visit and that it was my friend's birthday. We passed on dessert because my friend's baby was getting fussy so it was a pleasant surprise when the waitress brought a chocolate chip cookie with the check. It was one of the best cookies I've had. Warm from the oven with beautifully melted chocolate in various sizes, no chips, and topped with grey sea salt.
I am so craving more of that pizza.

On the chickpea train here too! Made some humus tonight and ate it by scooping it up with red, yellow and green pepper strips. Oh, and we washed it down with some sangria.

Kateln, what's your tuna salad recipe? That sounds intriguing ... It's not mine, it's Whole Foods--Tuna Salad with Gazpacho; 1 Sm-Medium red onion, diced 1 can of Chickpeas 1 can of tuna 3 tablespoons parsley, minced Balsamic Vinegarette (I make my own with EVOO, Balasamic vinegar, mustard, shallot, fresh ground salt and pepper) 1 can whole tomatoes (28 oz) 3 cloves garlic, minced 1 bell pepper, minced 1 small cucumber, minced 1-2 tblsp Olive Oil 1 tblsp Red Wine Vinegar Pita crisps/water crackers/melba toasts (for serving the tuna salad on). For the Tuna Salad: Drain and rinse your tuna and garbanzo beans and put into a bowl. Add 1/2 of the onion, the parsley, and the balasmic vinegarette (to taste), mix well--and serve on the water crackers. Very simple--but delish. Gazpacho: In your blender (Or I make it in a bowl with a hand blender) mash up the tomatoes (put in the juice from the can), the remaining onion, the cucumber, garlic, bell pepper (I also sometimes add a jalapeno), the olive oil, and the red wine vinegar--until they hit the consistency you like (I prefer mine really smooth)--then serve. You can garnish this with anything, I like mixing in some feta cheese and chopped up olives. Seriously--on days when it's too hot to cook anything--this is one of my "go to" staples.
