I made Pumpkin Bread yesterday--I swapped out the oil for homemade apple sauce. Honestly? Still moist, still cinnamon-y, and absolutely delicious.

I make chocolate cupcakes with applesauce instead of oil all the time, and I've never had a problem with them being dry. It really is a great substitute.
I think for dinner tonight I'm going to make chicken and dumplings or Dutch split pea soup. I want something warm and cozy, since the mister and I both have a cold and the weather has definitely turned chilly (albeit sunny). If I have to be cooped up inside, I can at least have some nice homey smells to make it all more enjoyable.

I ate some tasty food over the weekend. My boyfriend and I went to a sorta-upscale diner on Saturday for a late lunch. I had a fennel-crusted fried chicken sandwich with jalapeno aioli. Instead of lettuce they used kale! I love kale! On the side I had poutine (fries with gravy and cheese). Oh my goodness. So delicious.
Yesterday, I ate three delicious tacos from a kick-ass taco truck. One with carne asada, one with chicken and one with pork (not carnitas, this was in a spicy red sauce). I slathered on a ton of their salsa verde on all of them and used the sliced radishes as chips to scoop up the other salsas. This place never disappoints. They slightly grill the tortillas to give them some body so they don't break apart while you're eating.
When we got back to my place I made some Mexican hot chocolate to cap off a fantastic weekend.

good god, that sounds amazing. I was GOING to have a pepper jack grilled cheese on wheat with my tomato soup...til I burned it. I walked away and forgot about it. Sigh.

I am so craving pizza. PIZZA! I hope they have something decent at Grocery Outlet because I am very short on cash until Thursday and need to fill my kitchen with some food.

Breakfast was a bacon breakfast sandwich from Tim Horton's, on a biscuit with tea. That's pretty much what I have every day when I work mornings. Lunch was just potato and leek soup. Supper was awesome! Spinach and cheese cannelloni and some Spanish rose wine. Drool!

I made Red Velvet cupcakes for the boys. It had a ton of red dye in them! I may have to get a recipe to make them from scratch instead of using a mix.

I just made myself a delicious sandwich for lunch. Leftover slow cooked lamb shredded into pieces on soy and linseed bread with hommous and a bit of spicy ratatouille! Yum! We need a licking lips emoticon for this thread!

Chocolate with sea salt. Sounds really weird but it's sooo delicious.
Must go hide the rest of the bar from myself now.

It's not weird at all. Chocolate and salt go great together. Add some creamy caramel and it's heaven. If you're near a Trader Joe's you must find their Dark Chocolate Caramel with Black Sea Salt Bar. I'm pretty sure they're made by Vosges Chocolate, the fancy chocolatier from NYC. They have some really amazing products.
