I had a Wahlburgers burger in the airport once and I remember it being very good, but not the most amazing burger ever. (My favorite burger was from Checkers about 25 years ago.) I went out of my way to get the "government cheese". I've had government cheese and that was no government cheese!
The chain continues to expand around the country, and I don't think it's just because of name recognition. I think people must like the food. Restaurant chains originating in New England almost never expand outside of New England successfully, so it's a real achievement. Paul Wahlberg runs everything and I think it's a really solid business operation.

So in the States, the gov't buys food surplus. They will then distribute it to a variety of places (schools, food pantries etc). It's not usually the highest quality, but, it's generally nutritious so it will pass muster for school lunches, meals on wheels etc. Government cheese is a slang term about food that people get at a reduced price. Though honestly, that shit has been CLUTCH. In my town, any kid from 2-22 was eligble for free meals- you'd drive to the high school and tell em how many kids and you'd get 7 breakfasts, 7 lunches, some snacks, a gallon of milk and a produce box. At first people were reluctant to utilize it, as in the states "free lunch" is generally reserved for low income and food insecure people so they didn't want to be taking food out of peoples mouths, but they made it SUPER clear that they wanted EVERYONE to get them. So we'd all go and line up and get our free food and produce. The kids loved the lunches because they were "familiar" And this school year ALL kids get lunch and breakfast and snack for free while at school (probably because it's all allergy controlled and the kids are eating in their classrooms). Back to topic. Wahlburgers isn't bad. They aren't my go-to burger place, but if I'm near one and hungry I'll eat there....

I think Massachusetts manufactures their specific brand of "government cheese". My elderly great aunt was technically low-income and qualified to get free cheese and would pick up a giant hunk of it once a week, so I used to eat loads of it when I was at her house. It's sort of similar to Colby cheese, but better.
It's kind of an inside joke to the locals that anyone who ever "had to" eat government cheese, like the Wahlbergs themselves, know it's totally delicious and not available in stores.

I Edit I forgot to ask what’s Goverment Cheese?? ...and a rather strange memory for me: It’s also the name of a local-ish band I heard in the 80’s with the song “C’mon Back to Bowling Green” Here if you are interested: youtu.be/o1rqiJqeXDA

I forgot to ask what’s Goverment Cheese?? I thought the same Fitz so I googled, and it's what we'd call a cheese slice in the UK, so maybe it's similar in Ireland?
