I'm sorry you're sick, MrsCatHead, but the pho should make you feel better!
Pomegranates are back in the stores, and I've been having pom seeds on my yogurt for lunch this week (with a bit of granola for more crunch). I really like the pom-and-yogurt combination.

I had pho for dinner! (It actually wasn't as good as it usually is; the chilli factor had been dumbed down. Poo.). We also had rice paper rolls that were delish! Lunch was a chicken burger with peri peri sauce and mayo - yummers. Breakfast: muesli with apricots.
I also ate a ton of crap that I shouldn't have because I have been cooking up a storm for my son's birthday party tomorrow. So, there was cake batter, these little bacon and cheese quiches that I made for the kiddies, the skin off a roast chicken whose meat is going to make up finger sandwiches (can I just say, I flove chicken skin! I don't care how fatty it is!), some of the chocolate that is going to decorate the cake and some of the skittles that are going to decorate the cake (and I don't even like skittles). And this, people, is why I have a muffin top.

The Pho was greasy. Boo!
Today:
Breakfast was (I know this is strange) but I stopped on my way home from the trail and had a pumpkin spice latte, with skim milk and no whipped cream. So good. Then when I got home I heated up some of the black bean soup I made yesterday--which I topped with cilantro and avocado.
Lunch: I made a chicken chili with pinto beans and lot's of veggies. Yum. Topped it with lowfat sour cream and cheddar cheese.
Dinner: Will be lentil soup (it's fall, I'm on a soup kick) with veggies and tofurkey sausage. To go with it, I made some Pumpkin Bread from Trader Joe's mix, I swapped out the oil for apple sauce.

Sorry the pho wasn't good. We are lucky that there is an excellent Vietnamese restaurant near us. ABQ has a lot of Vietnamese restaurants but this one is really the best. mmmm lentil soup. I need to make some and freeze for this fall. I'm thinking soup and salad/sandwiches for lunches for the next few months.

Last night we went to a Thai restaurant I hadn't been to before but the boyfriend had. We had an appetizer with spinach leaves and a whole mess of goodies to place inside the leaf, wrap up and eat. There were peanuts, toasted coconut, chopped lime, ginger, red onion, dried shrimp, serranos and a special sauce. Holy moly, was it ever tasty!
I ordered a prawn pineapple curry that was so delicious. Rich, sweet and slightly spicy. I brought some if it home so lunch is taken care of. I really want to go beck. It was all so good.

WitchyPoo, it sounds like you discovered Typhoon? I love that appetizer. My mouth is watering. Their drunken noodles are the bomb.
