I'm currently hunting for my passport for a trip to the Netherlands to visit biondetta because I want pasta with mushrooms and truffles.

I was at the Science Centre today so my lunch was popcorn and a Coke. Clearly not very healthy but I made up for it with supper. I made a giant batch of ratatouille, which I ate with a little bit of sausage on the side.

Oh, man I love Coke. It's so great once in awhile.
Breakfast today was a scrambled egg with sauteed onions and zucchini, topped with some good shaved parmesan. I also had a piece of sprouted whole wheat toast with a little butter, and a delicious 1/2 a grapefruit. And coffee w/ half and half.
Lunch was Panera's veggie soup with pesto, and an apple. I was STARVING when I got home! Haha. Definitely wasn't enough. I had a small bowl of cereal and milk, and then a Babybel cheese (is it just me, or did these used to taste better? Maybe it's just the packaging that's fun).
Dinner was a 1/2 a chicken breast seared and baked, with herbs de Provence and red pepper flakes and salt, plus a small baked potato with a leetle bit of butter and lots-o-salt, and roasted broccoli. I'm going to an event tonight, so I'll probably have a drink there, too.

I had a blueberry Chobani yogurt for breakfast before heading over to my friend's house. My friend ended up picking up lunch at a local taco truck and bringing it back to the house. I had a torta with pinto beans, potato, cheese and lots of really tasty salsa. Right now I'm poaching a chicken breast for some chile verde, basically I'm just going to heat up some salsa verde with onions and add in the shredded breast. Not in the mood for really busy cooking tonday.

Yesterday was the boyfriend's birthday, so I made a dish we'd seen on a BBC cooking show. It's lamb shanks braised in a mix of rioja and balsamic, with red onions, carrots, and chorizo. The whole thing was served over mashed potatoes. Soooooo tender and tasty!

Breakfast today was 1/2 a very thin frittata - 2 eggs, sauteed onions and sauteed zucchini. With a piece of sprouted whole wheat toast and French pressed coffee (that I brought back from Maui - so good) with half and half. And a half a grapefruit. Snacked on some almonds mid-morning. Lunch is currently cooking - the other 1/2 of the "frittata" and some roasted cauliflower with garlic and salt. Yeah, I might eat the whole head of cauliflower. Maybe an apple, too. Going to happy hour tonight so dinner remains to be seen! Will probably have a snack before I go to tide me over.

The lineup for today includes an almond butter and apricot preserves sandwich, a Pink Lady apple, yogurt with blueberries and honey, a strawberry fruit bar, butternut squash/carrot soup and garlic naan. I usually bring a little extra to work so I have choices.
Dinner will probably be some chicken chile verde and black beans. I bought these luscious looking carrots that I'm craving. Forgot them today. Dang!

Breakfast was coffee and a plum.
Lunch was a slice of bread with some paté and a small piece of port salut cheese.
Dinner is portobello mushroom caps filled with a variation on spinach artichoke dip. Can't wait!

Oh, that sounds good. I'm always looking for things to put inside of portobello mushrooms, but I'd never thought of spinach dip. Thanks for the inspiration!

Glad to help! It's really tasty and surprisingly filling. I've filled them with hummus and feta, in the past, as well. I may try a cheese and broccoli mixture next.
