Tonight we had duck breasted marinated in red wine, balsamic vinegar, and apricot preserve. Pan seared then oven roasted. I served it with a cauliflower puree and roasted baby red onions in olive oil and balsamic vinegar. For dessert, we had an almond crusted plum galette sprinkled with thyme and cinnamon served à la mode. It was GOOD.

Breakfast: Post run glass of chocolate milk, which was made with homemade chocolate syrup (I love it when easy recipes are better then the storebought stuff). Honeycrisp apple.
Lunch: Cheese and chicken quesadilla, with black bean soup. I topped the soup with avocado and cilantro. Fruit smoothie made with mangos and strawberries, orange juice.
Dinner: Will be chicken noodle soup. I'm going to poach some chicken breast in chicken stock--then add some onions, garlic, carrots, celery. Instead of egg noodles, I'm going to add mini cheese ravioli instead. I'm serving it with a green salad.

Feeling lazy and it was on sale for $1.99, so Kraft Homestyle Mac and Cheese. This dish now has a place of honor on my "Do not eat, for the love of dog, do not eat!" list.

Hee! I think that stuff is only good if you're drunk and have killed off taste buds already. I'm pretty sure the only time I really enjoyed it was in college. After discussing various Dutch foods on Twitter with a friend, I was inspired to make a big pot of Dutch split pea soup yesterday. It's been crazy foggy here, so it seemed the perfect food for the weather. Best of all, leftovers for lunch today! Dinner is going to be chicken breasts filled with a spinach artichoke mix, served with some baby bella mushrooms, I think.

I never have much for breakfast or lunch, so it has been interesting to read what everyone is having for breakfast and lunch. I wish I had time to actually sit and eat lunch. It is a rare opportunity when I have the time.
Tonight we are having 5 grain tagliatelle in a wild mushroom and speck cream sauce. Light on the cream as we are semi-dieting and doing P90X. As a side, a rocket, valeriana, and red grape salad in balsamic vinaigrette.

Sure. Seriously it couldn't be simpler;
•1 1/4 C sugar •1 C unsweetened cocoa powder •1 C water •1/4 t salt •2 t vanilla extract In a medium saucepan, whisk together sugar and cocoa powder until most of the lumps are gone. Add water and salt and cook over medium heat, stirring frequently. Bring to a boil and cook for a few minutes, until thickened, continuing to stir frequently. Remove from heat and let cool for 5 minutes, then add vanilla extract. Store in air tight container in the fridge.
I have a list of things that I now make from scratch because it's easier/cheaper/faster to make them and keep them in the fridge (b/c I keep the ingredients stocked in my pantry) then to buy them; hummus, marinara, granola, chocolate sauce, pesto (when basil is growing), etc.
I'm going to attempt ricotta cheese and yogurt soon.
BTW on boxed Mac n'Cheese. I can and have made homemade mac n'cheese, and it's been great. But when I just want mac n'cheese I go with Trader Joe's version in the orange box. It's made with real cheese and is so much better then the other boxed brands.

Breakfast: Whole wheat toast with organic peanut butter.
Lunch: Coconut granola bar and a granny Smith apple.
Dinner: Italian sausage, chickpeas, and spinach stew in a light tomato flavoured broth.
