I hear you , MrsCH. And I didn't even cook a T'giving meal at my house, I went to a potluck! Still I have a fridge full of leftovers. Breakfast is coffee and birthday cake.

More leftovers. Our Thanksgiving turkey from a popular restaurant was awful (zero seasoning, not even salt) and I talked it out with the manager yesterday (she was super professional about it), so we got a new one. I'll be eating turkey through next week, possibly for all meals. And I don't mind! I love it.

I bought two turkey breasts to ensure that we'd have one for Thanksgiving and one for leftovers, specifically sandwiches. Tonight we're having the leftover cornbread dressing with pork chops. And gravy! Yum!

BTW on boxed Mac n'Cheese. I can and have made homemade mac n'cheese, and it's been great. But when I just want mac n'cheese I go with Trader Joe's version in the orange box. It's made with real cheese and is so much better then the other boxed brands. Trader Joe's frozen mac and cheese is pretty tasty, it doesn't taste like it's been made with cheese wiz. It's even better if you add extra cheese to it when you heat it up. That's true it is good. I also like their "Reduced Guilt" version. But sometimes you just want Mac n'Cheese from a box, or at least I do, and that is my "go to" version.

Ugh. I had way too much Thanksgiving goodness, plus pizza (really good, Chicago-style pizza) with hubby's family yesterday and some very rich pasta for lunch today. I feel like a blimp. Right now I'm trying to get back on track by making some vegetarian chili in my slow cooker with plenty of beans, corn, carrots, onions and lots of other goodness. I shouldn't be hungry, but the smell of it cooking is making me ravenous. I can't wait to eat. What else is new?

I couldn't face any more leftovers...plus all the stuffing is gone and stuffing is what Thanksgiving is all about for me.
So we had pizza last night with friends and tonight, we ordered Chinese

Breakfast: Smoothie made with kefir, orange juice, mixed berries/cherries, and mango. Full fat cottage cheese.
Snack: Greek yogurt with preserves, homemade granola
Lunch: Black Bean Soup, quesadilla with cheese and pepper jam, light caramal ice cream (yum)
Dinner: Will be chicken thighs, with rice and a big green salad.

Sure. Seriously it couldn't be simpler; •1 1/4 C sugar •1 C unsweetened cocoa powder •1 C water •1/4 t salt •2 t vanilla extract In a medium saucepan, whisk together sugar and cocoa powder until most of the lumps are gone. Add water and salt and cook over medium heat, stirring frequently. Bring to a boil and cook for a few minutes, until thickened, continuing to stir frequently. Remove from heat and let cool for 5 minutes, then add vanilla extract. Store in air tight container in the fridge. Thanks! I can't wait to try it. To be topical: Breakfast: Greek yogurt with almonds and sunflower seeds mixed in. Lunch: leftover stuffing, mashed potatoes and gravy Snack: homemade chocolate chip cookies Supper: risotto made with leftover Prosecco (like a poor person's version of champagne risotto, I hope) Good thing I am restarting boot camp tomorrow night!

I am making a potato, cauliflower and pea curry right now. The house smells so aromatic! I'm going to serve it tonight with some chicken breasts that are marinating in lemon and cumin and an eggplant kasundi on the side. Oh, and plain unsweetened yogurt too. Yum!

I had an apple, tea and muesli with yogurt this morning, then some cherries and blueberries with a cup of tea and pain du chocolat for lunch. Ahem. Not a nutritious lunch but I am slap happy with it.
