My new job has a Jimmy John's sub shop across the street. I swear I've had their Club Lulu sandwich 4 times in the past week. I just love it! I love their veggie sub. Yum. JJ's is a good place.

I have been fighting off a cold for a couple of days (not sick, just feeling a little rundown) so I made chicken noodle soup this afternoon--I replaced the regular noodles with mini-cheese ravioli from Trader Joe's, added spinach at the end, and topped it with parsley, chives, and a little bit of parmesan cheese.
Yum!

I made lamb shanks braised in rioja with chorizo and garlic last month for the boyfriend's birthday, and I ended up freezing some of the leftover sauce, because it was too good to waste. Yesterday is used that to make a beef and celeriac stew, with some fries on the side for dipping. It's so good, and there's still some sauce left, so we'll probably be doing the same thing again tonight, with some mushrooms added in, as well.

I'm attempting to make chicken chili in the crockpot for dinner. I have no idea how it's going to turn out.
For lunch I'm going to try out a recipe from Runner's World Magazine for a lentil and black bean soup.

I just tried a recipe from Oxygen Fitness for sweet potato and tuna patties with peanut sauce and it was one of the best things I've ever made at home. I adore sweet potatoes.

it's been one of those days so I'm just microwaving some eggplant parmesan from Trader Joe's and adding pasta with zucchini.
omg, there's a Jimmy John's next to Five Guys near my apt. Everytime I'd go to Five Guys, I'd think that Jimmy John's looked like a redneck bbq place. The colors and that name...I dunno. But that's what I thought. Just checked the website cuz of this thread. They have gourmet sandwiches? Holy shit. I'm going tomorrow!

Breakfast was leftover chile verde served over a corn tortilla and topped with scrambled eggs. I grabbed a Dick's cheeseburger while shopping, a rare fast food indulgence. Dinner was leftover cashew chicken and brown rice.

I decided to let the chili set up the fridge overnight (I prefer chili on the 2nd day), and for dinner I made sausage soup with kale, wild rice, chicken sausage, and mushrooms. It was delicious.

The last time I was there my sandwich was handed to me before I had put my debit card away. Swoosh, woosh! They are fast.
