I'm restarting this up...
Breakfast: I was starving this morning! I took a whole wheat english muffin, toasted, topped it with some fresh baby spinach, two poached eggs, and some salsa mixed with avocado. I also had some of the calamata olives we have in the house, some full fat cottage cheese, and tangerines as well. So good.
Lunch: Will be these leftovers of this Two Bean Chicken Chili I made in the crockpot on Tuesday. I took chicken thighs (skinned, but not boned) and put them in the crockpot with 1/2 a lb each of dried black beans and navy beans. Then I sauteed up an onion, a bell pepper, a jalapeno, garlic, cumin, chili in adobo, adobo seasoning, and put that on top. Topped it with a quart of chicken stock. Put the whole thing on low for seven hours. The chicken pretty much fell right off the bone and shredded right into the soup. I'm going to heat up a Trader Joe's Roasted Vegetable pizza to go with it.
Dinner: TBD.

I've been cleaning out the fridge/freezer, so we're having chili tonight, made with some ground beef we had on hand. It smells so good, even if I forgot that I'm out of cumin. Oh well, lots of shredded cheese and sour cream will make up for it, I'm sure.
Lunch was a fried egg on bread spread with a herbed cream cheese. Snacks have been some of the brownies I made yesterday. Yeah, definitely holiday eating still going on!

kateln, that chili sounds delcious.
So far I've eaten a peanut butter and honey sandwich on Dave's Killer Sprouted Wheat Bread, a couple of chocolate covered pretzles (the last of the holiday treats at work) and salmon spread with sweet onion crackers. I also ate some leftover hummus that I left in the fridge on Friday. I don't think that was a good idea. My belly is all rumbles.
If I feel better I'll have leftovers from last night's dinner. I made linguini with crumbled chicken sausage (flavored with basil & sundried tomato) and roasted broccoli. I used Marcela Hazan's ridiculously easy and delicious recipe for tomato sauce with onion and butter. I tossed some cubed mozzarella cheese with the sauced linguini then topped the pasta with the sausage and broccoli so not to lose it crispy texture.
It was really good.

Witchy it was delicious. I have fallen head over heels in love with my crockpot. It rescucitates dried beans with no drama, no soaking, and perfectly. I'm going to make pasta fagioli in it this weekend.

I always use my crock pot for my pinto beans. I tried to make split pea soup but added too much water. I forgot that there's little steam that evaporates. I like my split pea soup thick but this soup was way too watery. Lesson learned.

Breakfast this morning was very Dutch: coffee and oliebollen (balls of fried dough with currants, sultanas, etc.) leftover from last night. Lunch was some of the homemade lasagne left over from last night's dinner. Excellent, even when cold! Dinner is my Southern roots coming through: pork chops, greens (kale, since I can't get collards), and hoppin' John. Gotta have my black-eyed peas! Dessert will probably be more oliebollen if we're not too full. We're also going to enjoy some sparkling wine and red wine to celebrate, since we were too busy trying to calm our dog last night (who was stressing over the non-stop fireworks) to get to fully enjoy the alcohol portion of the evening.

Today is the day of leftovers. Breakfast was leftover donuts from yesterday morning, and lunch & dinner will be leftovers from yesterday's restaurant meals. Given that my goal today is to sit around and do nothing, I couldn't be happier.

The smell from my crockpot is mouth-watering! I'm cooking kale with turkey sausage and white beans, with onions and garlic. I'm also making lentil soup with carrots and haricot vert, cornbread, brown rice and sauteed mushrooms. I'm making a ton of food so I'll have lunches covered for this week.
Trying to eat better and it's just easier if the food is already cooked, waiting there in the fridge.

This morning I made buttermilk banana pancakes served with ginger syrup and a side of peppered bacon. I hadn't had ginger syrup before. It was delicious.

I used to make ginger syrup for iced tea and/or cocktails. Did you do a simple syrup with fresh ginger, or did you do something different?
The pancakes sound fabulous.
