mmmm pancakes.
I'm trying to eat more veggies and less grains for the new year so tonight I cooked: boneless/skinless thighs dredged in flour and with a pan reduction, roasted broccoli, braised celery, cucumber and red onion with mustard vinaigrette. SOOOOO delicious. And we have tons of leftovers.

One of my new year's resolutions was to cook more.
Breakfast: slice of whole wheat and flax toast with an egg (scrambled with spinach and salsa) and a slice of deli roast beef.
Lunch: cold Asian noodle salad with tofu, green beans, onion, and peanut sauce (left over from last night).
Snack: frozen yogurt from one of those self-serve places (my reward for not murdering anyone at Petco or Ikea despite their idiocy).
Dinner: baked piccolini with ground beef, spinach, portabella mushrooms, onions, artichoke hearts, and some cheese.
I had a big bag of spinach that was on its last legs, so I incorporated it into as many recipes as I could!

Mr. tabby is making beef stew for tonight. The grocery store near us has specials on lovely stew meat every Saturday, and we've been taking advantage of it. I love stew in the wintertime.
I'm still eating holiday leftovers for lunches. Fortunately, the leftovers are my favorite thing about holiday meals. And it's clementine season, so I have at least one of those every day.

Tonight's dinner is a pork tenderloin with a black cherry glaze made with the jam a friend brought over from France. I'm serving it with sautéed Brussels sprouts and mushrooms.
Breakfast/lunch was the last of the hoppin' John and a cheese and chorizo sandwich.

I used to make ginger syrup for iced tea and/or cocktails. Did you do a simple syrup with fresh ginger, or did you do something different? The pancakes sound fabulous. I bought a bottled organic ginger syrup made by The Ginger People. It was only $4 at the grocery store. Really tasty and a good ginger kick but not too much. It went really well with the banana pancakes. I have some vanilla ice cream in the freezer. I'm planning to use it as a topping. I'd like to try it in a savory way, maybe glazed carrots or as a drizzle on a soup.

Last night after my run I needed something fast, filling, and reasonably healthy. So I cooked a diced onion and garlic in some olive oil until transluscent. Then I added some frozen corn, a chipotle pepper in adobo (chopped up fine), some cumin and some Adobo seasoning. Sauteed that until I could smell the cumin. Then I added a 1/2 cup of water, a large can of tomatoes, and some drained black beans--not liking the texture, I pureed it into a soup. Top with salt and pepper, some diced cilantro, and avocado.
This was fantastic. Smoky, spicy--but not overwhelming, creamy--but totally vegan. I loved it. Very healthy.
I've already used it twice today;
Breakfast: Poached eggs, on a whole wheat english muffin, with a couple of dollaps of the warmed soup, some spinach, avocado, and salsa. Chopped up an apple.
Lunch: Cheese quesadilla, on corn tortillas. Red pepper jelly. It was the "sandwhich" to a bowl of the leftover soup from last night.
Snack: Fage yogurt, with maple syrup, cinnamon, and vanilla. Tangerines.
Dinner: A spinach and mushroom lasagna, salad. Dark chocolate for desserts.

I'm eating the last of my African-inspired chicken peanut stew. There was more broth and veggies than chicken at the bottom of the pot so I served it over rice to soak up the goodness.
Dessert will be a Vosges salted caramel chocolate bar.

Kateln, that sounds fabulous. I was wrinkling my nose at the texture, but then when you said you'd pureed it my ears (eyes?) really perked up. Gonna have to try it.
The other day a girlfriend and I happened on a place that sells nothing but olive oils and vinegars. We each bought sweet lemon–infused oil; I got pomegranate vinegar and she bought strawberry. Talk about some heavenly salads ...

Sunnyhorse it really was great. I'm sorry it's gone! But definately puree it (I use a stick blender). I also do a similiar soup with garbanzo beans that I puree and top with pesto sauce. Again, absolutely delicious.

Someone bought me a Seattle Lemon Ice candy bar for Christmas, and, while I'm neither a fan of lemon candy or white chocolate, I am loving this bar. The tart candy bits go so well with the creamy smooth white chocolate. Tasty.
