homemade coffee vanilla peanut butter That sounds amazing. It is, and it's the second batch of this I've made. It's from Run Fast, Eat Slow: Nourishing Recipes for Athletes (guys, I can't recommend this cookbook enough...everything I've tried from it has been delicious); 4 Cups unsalted roasted peanuts 2/3 cup coconut sugar or other granulated sugar (I use Turbinado since that's what I keep on hand) 2 tablespoons freshly ground coffee (I use Trader Joe's French Press. Not freshly ground, but still tasty) 1 tablespoon coconut oil (slightly melted), or olive oil (I use coconut oil, it does not taste coconutty) 1 tablespoon vanilla extract (I use Trader Joe's, it's my closest grocery store, Bourbon Vanilla) 1 teaspoon fine sea salt (leave out if the peanuts are salted. I use kosher b/c that's the handiest for me) 1. Place the peanuts in a food processor, or high speed blender (I have both, and use the processor, easier to clean). Process or blend until there are no visible pieces of nuts and it begins to look smooth. If you overprocess, you end up with peanut liquid not butter. 2. Add the sugar, coffee, oil, vanilla, and salt--then blend until JUST incorprated. 3. Store in a jar (I use a mason jar) in the fridge for up to six months. You can leave it out for a few minutes to make it easier to spread. Makes 3 cups. About 48 tablespoons. Seriously, this stuff is so GOOD. I love it on sprouted bread, or on a banana. I also really just like it straight from the jar to my mouth via a spoon. I have tried it in a smoothie, and that made the flavor fad. 1-2 TBS is all I need to get going (even with the sugar it averages out to about 180 calories/serving via My Fitness Pal app).

We have a new guy in my workgroup, so the boss took us out for lunch today. We decided to go to one of my favorite places, and I got to have yummy Caesar salad. When he called a while ago, Mr. tabby suggested we go to the pizza place in our neighborhood for dinner.
It's a good day.

I'm so annoyed. I ate badly today in a deliberate attempt to cheer myself up cos I've had a meh few days. So I thought, you know what, today I'm gonna "treat" myself with some cheat-type foods... and I didn't enjoy any of it! I think I'm so used to eating healthy-ish on weekdays that my former faves just taste bleh. I feel robbed. Breakfast: toasted cheese & tomato sarmie. BLEH. Snacks: Small packet of Fritos and a chocolate. BLEH. Lunch: Chicken and feta wrap. BLEH. Literally the only thing that I enjoyed was a cappucino. What a waste! Truly, that is a bummer. I mean, I guess it's actually a good thing but sad, too.

I had a piece of one of my auxiliary pecan pies for breakfast which sent me to the moon with the sugar content. Hoo! I just made the cornbread dressing to take. I'm sure once I get to my friend's, I will be drinking her husband's farmhouse red which he made in conjunction with a local brewery that they now part-own. That will be appetizer for smoked turkey+fried turkey+green bean casserole+key lime pie cheesecake+pumpkin/chocolate pie+...Can't wait.

It's almost six pm here and I've eaten nothing except about five individual Frito-type chips that I found in a market here. Trust me, they're rare. But in another market, I found okra! I did a celebration dance right there in the store. I had an okra source in the Netherlands, but didn't think I was going to find one here in Italy. Woohoo!!! So we're having fried okra and chicken wings for dinner tonight. We'll be doing the big Thanksgiving feast tomorrow, because I thought it was next week and wasn't prepared to get everything done in time for today. No one here cares anyway.

Hub and I are on our own this year and we are going to eat "Sweet and Salty Salmon," a Pati Jinich recipe. I will be making a pumpkin pie shortly, and I expect we'll fight over it.

I've only eaten an apple today, but I'm making caramel cake from scratch, and 6 cheese baked macaroni for the family potluck. I'll be wearing my stretchy pants today. I'm going to eat my fill, nap, and eat some more!! Whoo hoo!!
