She went with apple. With a pi symbol made out of scraps of crust, and pi shaped vent cuts.
It is just out of the oven. We probably won't het to eat any until tomorrow, depending on how long we stay up watching Rachel talk about tax returns....

I totally forgot about it being Pi Day! Without any thought I had pizza for lunch and watched the pie episode of the Great British Baking Show season I'm currently binging. I suppose today was an accidental success.

I bought a bunch of baking trinkets for Traffic last week. Included in the stash was a tub of baking beans.
Today, as a way to "test" them, she made me a coconut cream pie. From scratch. Cuz she's awesome.
I will eat it tomorrow, because I just finished the pumpkin pie I made last week when the Pyrex bowl on the Kitchen Aid exploded.
I know it's delish, though, cuz she made me taste the filling.
Mmm...Coconut Cream Pie....

So I started with this recipe and made the following modifications: - I used 3/4 cup sugar in the filling instead of a cup - I did not put a lattice on top - the strusel topping was plenty - I could not find caramel sauce at my grocery store (quelle horreur) so I used caramel squares and softened them in the microwave. Basically, pour a bit of milk or cream over the squares, warm in microwave for 30 seconds (err on the shorter side or it will harden), then mix. - for the sauce topping, I mixed in a little bit of sea salt because I felt that it needed it.
