Happy PI Day! I just bought a frozen apple pie and a pie shell and strawberry rhubarb filling and am siccing the eldest on a crumb topping to make the second pie. Because..why not?

I was gonna make a pie, but started too late to make crust from scratch. Went to the store for premade crust, and on the way out, saw a display of pies from the bakery, so bought a pecan pie for Traffic, cuz she won't want any of my Marie Callendar's coconut cream pie.
All for after dinner. Which shall be the shepherd's pie in the oven as I type...
ETA: I swear, new typos appear every day....

I had some leftover pizza for lunch yesterday, and stopped at the neighborhood bakery on the way home. I got a slice of apple pie and a slice of sour cherry pie, and Mr. tabby and I enjoyed them for dessert. I consider that a successful Pi Day!

I tried the strawberry rhubarb pie and it was good. I was a little appalled that this pie was created in my house with a pre-made shell (off the shelf! not even in the refrigerated section!) and a CAN of filling. But, it was surprisingly tasty. I would even do it again.

Belated pie day report: there's a bakery in my mom's neighborhood that specializes in pie. I went twice in the three full days I was there. Apple chai was delicious (apple with chai spice) and I practically wept after the French Coconut, which was custardy with a crusty top of bruleed goo, coconut and some pecans. I had a bite of my mom's cranberry strawberry, which was perfectly tart and not very sweet--perfect.

I noticed yesterday that the rhubarb in my backyard already has stalks about six inches high so should be able to make a strawberry rhubarb pie by Easter!
