Yeah, Stevia has a weird aftertaste.
I saw that Talenti gelato has started selling a “low sugar” version sweetened with monk fruit and sugar alcohols. I haven’t tried it yet (because honestly, my dog loves ice cream and I frequently choose my ice cream on what he can have and sugar alcohols are bad for dogs. Yes I’m a crazy dog lady).

Years ago, when I was about to leave for Europe with my high school choir, my grandparents drove down from our hometown to see our farewell performance. Our last rehearsal ran late into the night, and when I got home, my dad and his dad (a lifelong farmer and cattleman) were the only ones still awake. My dad asked me if I was hungry (I was starving), and would I like him to pan-sear a little filet mignon that he had bought for me. I said yes, and he said, "The usual?", to which I replied, "Yes, please". So I sat down at the kitchen table with my granddaddy, showed him our itinerary, and heard about what was going on back home. Dad came over with the filet mignon, and I immediately cut into it. Granddaddy took one look at that medium-rare interior, and said, "Sugar, I've seen cows hurt worse than that get up and walk away..."

Well, it did sort of remind me of certain scenes in Bram Stoker's Dracula, but was otherwise completely satisfactory.

Last month a fishing boat returned to Seattle with 48 tons of sushi-grade albacore, which they couldn't sell to restaurants because none were open. They sold it to the public at Fisherman's Terminal at $3/lb for a whole tuna. We bought a 16 lb tuna, cut it into four loins, ate one and froze the rest. Tonight we're eating the last loin. We've been doing it seared rare with a wasabi-ginger-sesame drizzle, but I have been using a much simpler mix of white and black sesame seeds and togarashi shichimi for the crust.

Asparagus. Lots of asparagus. Some for lunch, along with some green beans I cooked up yesterday for lunch that I dip in ranch dressing. Tonight I'm making asparagus risotto. Either homemade or from a package with some fresh asparagus thrown in. Depends on how much I want to stand over a hot stove tonight. I'll probably make the homemade, though, as I have the end stalks to help make the broth. I'm sure I'll have to stir the packaged one regularly anyway.

Baked boneless skinless chicken thighs--preheat oven to 425 degrees; lightly spray or grease a rimmed cookie sheet pan with cooking oil, place thighs on pan, season with whatever you like (I sprinkle both sides with salt, pepper, paprika, garlic powder, and onion powder--you can use chili powder or whatever you want in addition to or instead of...), and bake for 20-25 minutes. Remove from oven, cover pan with foil, and let sit for 15-20 minutes before serving.
We've eaten these plain, we've cut them up and made tacos and nachos with them, and ds1 made an awesome chicken salad with them a couple of times. Really easy and versatile!

Just walked into the house after a quick trip to the pharmacy--Mr. d came downstairs and asked, "Did you do anything different to the chicken this time?"
I said "No, why?"
"Because this batch just tasted especially good this time..." (I think it's because I didn't bake it for quite so long...it was very moist and flavorful.)

I LOVE baked chicken thighs. Unfortunately, they're one of the many foods that my husband no longer likes after his stroke.
I like them simple like you do, but I also love marinating them. One of my favorites is soy sauce, Thai sweet chili sauce and some lime juice.

Aldi's 'German week' was recently, so I am eating orange Jaffa cakes and drinking coffee. It's been years since I bought Jaffa cakes. Thank goodness they are in 2 sleeves or I'd eat the whole box at one sitting instead of half the box.
