I made a mixed berry pie with blueberries, blackberries and raspberries. The raspberries were definitely the strongest taste element, even though there were much fewer of them than the other berries. Since raspberries are the most expensive, it’s nice to know you can do a “raspberry pie” that is 1/4 raspberries, and it’s still a raspberry pie.
It was very tart. I thought too tart, and we had no ice cream to mellow the tartness, but my rhubarb loving husband loved it. I put in one cup of sugar (I do 3/4 cup for other pies, as a comparison) and I’d up it another 1/4 cup at least if (when) I do it again. Beware, these suckers leave tiny seeds.

For those who asked, the pie was not flat exactly, and the raspberries definitely did not hold their shape, but I don't think the filling was mixed with anything (except sugar.)

I just made two coconut cream pies, with unsweetened coconut, meringue, and toasted coconut on the top.
It been many years since I made a cream pie, it’s very labor intensive you use a lot of bowls, pots, and devices.
A double crusted apple pie is much easier to assemble, but that pie was sublime. I used flour to thicken, meringue is easy with a stand mixer (I used to do it by hand), and the result was light, creamy, and 4 people ate the whole pie.

Well, it's not pie, but I have to talk about it anyway. Two red velvet cheesecake layers with a vanilla cake layer in between. Cream cheese frosting. Will it be delicious? I sure as hell hope so.
The coconut cream pies sound wonderful.

Good luck with your pie, suekel. I made an apple pie a couple of weeks back, (made with Gala apples for the filling) and it turned out very tasty.

(adjusts glasses) Well, actually... the correct term for quiche is... Simply Delicious!
In a sane world, my Dad's quiche would be the basis of a world religion. I simply don't understand why quiche was the "Avocado Toast of the 1980s"
