I made a vegan chocolate pie that used silken tofu as an ingredient. When I tasted the batter after I mixed it up, I could taste the tofu. So when I served it, I gave a huge disclaimer that it was the first time I’d made it and wasn’t sure it was good. But to my surprise, no tofu taste since the filling had had time to set. In fact, my dad really liked it. Big relief!
I also made vegan ginger cookies from scratch and they were also delicious.
I’ve never been a big cook but going vegan has forced me to be more adventurous in the cooking department, so I’m pleased that the efforts turned out!

I've been flailing around trying to find an acceptable substitute for buttermilk in my baking, especially for biscuits. I finally discovered a coconut derived yogurt (So Delicious brand) that works when diluted with water. Yay!

My cheesecake-vanilla cake dessert was a hit. Yummy and rather spectacular to look at.

OMG, do you have a recipe for vegan ginger cookies? Years ago Starbucks used to sell a vegan chocolate brownie (at least they did here in Toronto stores), and it was phenomenal. Silky chocolate icing to die for.

I made a similar pie once years ago and found the same thing - no one would have guessed it was tofu if I hadn’t told them. Thanks for the reminder - I need to add that back to the rotation since we have a cardiac patient in the family and we avoid serving all the usual fatty yummy buttery stuff.

A long time ago (in a galaxy far away), I made a vegan chocolate pie. It was sooo good, I was told, "It's almost too chocolaty". I responded, "Get outta here with that bullshit". It was a Brianna Clark Grogan recipe.

Traffic made a lemon tart, topped with candied lemon, for New Years dinner at my dad’s today.
It was rectangular, and had a wiggly edge, but it had a crust, filling and was delicious.
I am pronouncing it “pie”!

I am double posting, because a child could gestate in the time it’s been since we had pie!
This weekend, Traffic wanted to make a quiche for breakfast. But she realized, as she put it in the new oven, that she forgot the cream and the mushrooms.
I hate mushrooms, so I am ok with that. It was a little dry, but oh so tasty. So, maybe not a proper quiche, more of a sausage omelette pie.
Yum.
As for the new oven, we are still learning. After a few attempts, we think we have the thermostat tweaked into accuracy. She made hamburger buns last night, and they were a little over done, but that could be because we got distracted bingeing Buffy....

Well, pumpkin is technically a vegetable, so pie for lunch or any other meal, hell yes.
